Blueberry Clafoutis Recipe

Set oven to 350 degrees. Butter 6 shallow dishes and place on sheet pan.

10-fluid ounce whole milk

1/3 cup granulated sugar

3 each large eggs

1 tablespoon vanilla extract

pinch kosher salt

1 cup all purpose flour

Place all the above ingredients into a blender, start on low and work up to high, blend until everything is well incorporated and smooth.

2 cups blueberries

1/3 cup granulated sugar

Coat the bottom of dishes with batter, fill dish with blueberries and sprinkle with half of the sugar (yes I listed 1/3 cup of sugar twice, once for batter and once for the assembly), pour remaining batter over berries and sprinkle top with remaining sugar. Place sheet pan with dishes in oven and bake for 25-30 minutes, they are done when a cake tester inserted into center comes out clean.

1 pint heavy cream

2 tablespoons powdered sugar

1 teaspoon vanilla extract

While the Blueberry Clafoutis are baking, whip the cream in a bowl with the powdered sugar and vanilla extract. By hand, in a mixer, or pour into an ISI canister and charge, which ever you like.

While still hot, place on serving dishes, dust with powdered sugar and top with whipped cream.
